Makes 10-12 ice cream sandwiches

Ingredients

6 cups Kellogg’s® Rice Krispies®

1/4 cup (½ stick) butter

1 -10-ounce bag marshmallows

2 teaspoons vanilla

1/2 cup assorted decorating sprinkles

2 pints of your favorite flavors of ice cream, frozen yogurt, sorbet, or gelato

Let’s stir-up some Rice Krispies® fun!

  1. Lightly spray a cookie sheet with cooking spray and set aside until ready to use. Melt butter in saucepan over low heat and then add marshmallows, stirring often until melted. Remove saucepan from heat and stir in vanilla. Add cereal and stir together until a large cereal ball forms.
  2. Scoop the Rice Krispies® mix evenly onto prepared cookie sheet. Moisten your hands with a splash of water or spray hands lightly with cooking spray and flatten-out mix to approximately ¼ inch thickness. Sprinkle evenly with decorating sprinkles and place in refrigerator for 15 minutes. Remove from refrigerator and cut-out shapes with 2-inch cookie cutters which have been lightly sprayed with cooking spray.
  3. Place a small scoop of ice cream on top of one undecorated side of Rice Krispies® cut-out and then top with another cut-out, decorated side facing up. Gently press together. Continue until all cut-outs have been made into sandwiches.
  4. Place sandwiches back onto cookie sheet uncovered and put into freezer. Transfer cream sandwiches to a covered container after 30 minutes and freeze for at least 2 hours before serving. May be frozen covered for up to one week.

Kid-friendly Kitchen Tips

  1. Younger chefs 3-6 will enjoy cutting–out the different shapes of Rice Krispies® treats. Circles, hearts, and large petal flowers work well. Make sure to have equal numbers of assorted cut-outs to match- up making the ice cream sandwiches!
  2. Older chefs 7 and older can help scoop out ice cream. Make sure to let ice cream stand-out at room temperature for a few minutes for easier scooping and use a table spoon instead of an ice cream scoop for these small ice cream sandwiches.
