Its only summer once a year and that means beaches, swimming and Popsicles! For a special treat, make a batch of homemade Breakfast Popsicles. They are perfect for a quick and fun breakfast, but they also make a perfect non- sugary snack anytime of the day…and they can be made ahead and ready to eat anytime!
INGREDIENTS
1 1/2 cups plain or vanilla Greek yogurt
1/2 teaspoon vanilla extract
1/8 teaspoon almond extract
2 tablespoons honey or maple syrup
1 1/2 cups fresh mixed berries, peaches, etc. should be chopped or diced
Tiny pinch of sea salt
1/2 cup granola
INSTRUCTIONS
Combine yogurt, vanilla, and 1 tablespoon honey in a large bowl. Fold in berries and other fruits and 1 tiny pinch of salt. Place granola in a bowl and drizzle with the other tablespoon of honey or maple syrup and stir to lightly coat granola.
Divide yogurt mixture among molds, leaving about 3/4″ at the top. Tap molds on counter to get rid of any air pockets; top with granola. Cover molds, insert sticks, and freeze until ice pops are firm, at least 2 hours.
